These baked oats are a decadent breakfast for two. Perfect to serve in the morning of Valentine's day (or any kind of day) to that special someone. Top with your favourite nut butter, chocolate chips and fresh berries.
150ml plant-based milk
2 tbsp chia seeds
1 tbsp raw cacao powder
1 tbsp vegan chocolate protein powder (or 1 tbsp more cacao powder)
1 tbsp cacao nibs
1 tbsp chocolate chips
1 tsp baking powder
1 tsp vanilla
a pinch of salt
2 tbsp maple syrup, optional
Preheat the oven to 170 Fan/190*C (400°F) and grease two small ramekin or single-serving enamel dish.
Mash one banana until smooth and add the oats, milk, chia seeds, raw cacao powder, chocolate protein powder, baking powder, cacao nibs, chocolate chips, vanilla, salt and syrup, if using, and stir until creamy.
Slice the second banana and add a few slices into the bottom of the dish. Pour into the lined ramekin and top with the other slices of banana and top with a few more chocolate chips, if desired.
Bake for 15-20 minutes until firm to the touch and enjoy warm or cold the next day with a splash of milk, yoghurt, extra fruit and nut butter.
