Quick to put together this makes for a great fresh side salad. A great addition to any lunch or dinner bbq spread. Packed with bright colours and fresh flavours.
1 packet mixed leafy greens
2 cups cherry tomatoes
1/2 red onion
1 1/2 cups fire roasted red peppers
1/3 cup dairy free feta
Drizzle of balsamic vinegar
Salt + pepper to taste
Cut cherry tomatoes in half and set aside.
Finely chop cucumber, roasted red peppers and red onion.
On a serving dish, layer leafy greens, cherry tomatoes, cucumber, roasted red peppers, and red onion.
Drizzle with balsamic, crumble with feta, and season with salt and pepper.
