A warm and cozy bowl of goodness that couldn't be easier, as far as curries go! This takes about 20 minutes to make!
2 tsp oil
1 medium onion finely chopped
2 tsp garlic powder
1 tbsp ground coriander
1 tsp chili powder
1/4 tsp cinnamon
2.5 tsp cumin
2 tsp curry powder
1/2 cup marinara or tomato sauce
3/4 tsp to 1 tsp kosher salt
1/4 tsp pepper optional
1 and 3/4 15 oz. cans black beans drained and rinsed
1 15 oz. can coconut milk (full fat)
1/4 to 1/3 cup sliced green onions, to taste
2-3 tbsp finely chopped fresh parsley, to taste
Cook the onion in the oil over medium heat for 10 minutes, stirring occasionally and add bit of water to prevent burning if needed.
Then add all the spices, stir, cook another minute. Add remaining ingredients, stir and gently simmer for around 10 min. Serve and enjoy with rice.
