RECIPE BY KELSI FROM HEALTHY KELSII

This is a delicious and easy salad to make. It's filling and packed full of nutrients. Each bite is a textural delight as well. It's perfect to throw together for a weekday lunch!

INGREDIENTS
  • TACO BOWLS
    • 1/2 cup quinoa
    • 2 cups leafy green
    • 1/2 cup quinoa
    • 2 cups leafy greens
    • 1/2 avocado, sliced
    • 3 cherry tomatoes, sliced
    • 1/3 cup canned black beans
    • 1/4 red onion, sliced
    • 1/3 cup cabbage, sliced
  • DRESSING
    • 1 tbsp olive oil
    • 1 garlic clove, crushed
    • 1/2 tsp wholegrain mustard
    • Juice from half a lime
    • 1 tsp maple syrup
METHOD
  1. Cook your quinoa by adding it to a small pot over medium heat with 1 cup of water. Cover and bring to a boil, then lower the heat and simmer for 15 minutes. Turn off the heat and leave covered for another 5 minutes until fully cooked.
  2. To make the bowls, add the leafy greens to a bowl and top with the avocado, cherry tomatoes, canned black beans, red onion, cabbage and quinoa.
  3. To make the dressing, add all of the ingredients together and mix well to combine. Pour the dressing on top of the salad and enjoy!
