RECIPE BY KELSI FROM HEALTHY KELSII

This cold noodle salad is the perfect meal during the summer heat. The fresh veggies gives a delight crunch that's refreshing and delicious.

INGREDIENTS
  • SOBA NOODLE SALAD
    • 90g soba noodles
    • 1/3 cup edamame
    • ½ cup mushrooms, chopped
    • ¼ cabbage, sliced
    • handful of coriander
    • 1 spring onion, chopped
    • 1 chilli, deseeded and chopped
  • TAHINI DRESSING
    • 2 garlic cloves, crushed
    • 1 tbsp tahini
    • 1 tsp maple syrup
    • 1 tsp lemon juice
    • 1 tsp soy sauce
    • 1 tbsp water
METHOD
  1. Cook your soba noodles in boiling water and steam the edamame. Cook your mushrooms on a hot pan for around 10 minutes.
  2. To make the dressing, add all of the ingredients to a bowl and mix well.
  3. Add your noodles to a serving bowl and top with the edamame, mushrooms, cabbage, coriander , spring onion and chilli. Pour over the tahini dressing and mix well to combine.
  4. Enjoy!
