RECIPE BY KELSI FROM HEALTHY KELSII
This cold noodle salad is the perfect meal during the summer heat. The fresh veggies gives a delight crunch that's refreshing and delicious.
INGREDIENTS
- SOBA NOODLE SALAD
- 90g soba noodles
- 1/3 cup edamame
- ½ cup mushrooms, chopped
- ¼ cabbage, sliced
- handful of coriander
- 1 spring onion, chopped
- 1 chilli, deseeded and chopped
- TAHINI DRESSING
- 2 garlic cloves, crushed
- 1 tbsp tahini
- 1 tsp maple syrup
- 1 tsp lemon juice
- 1 tsp soy sauce
- 1 tbsp water
METHOD
- Cook your soba noodles in boiling water and steam the edamame. Cook your mushrooms on a hot pan for around 10 minutes.
- To make the dressing, add all of the ingredients to a bowl and mix well.
- Add your noodles to a serving bowl and top with the edamame, mushrooms, cabbage, coriander , spring onion and chilli. Pour over the tahini dressing and mix well to combine.
