I’m not even joking when I say this is likely to be the best ever chocolate loaf cake. It’s soft, fluffy and moist all in one with a rich chocolate orange taste. And is there anything much better than the chocolate orange combination?!

I found that loaf cakes are SO much easier to bake than the bigger cakes, and the smaller size means less waiting time too! So this is a winner in every way and you’re going to love it!

INGREDIENTS:

  • 1 cup coconut milk
  • 5 Tbs orange juice
  • 4 Tbs cocoa powder
  • 4 Tbsp coconut nectar/syrup
  • 2 cups self raising flour
  • 150g vegan butter
  • 1/2 cup brown sugar
  • 1 orange zested
METHOD:
  1. Preheat the oven to 180ºC fan assisted.

  2. Line a 2lb loaf tin

  3. Zest the orange + then juice it.

  4. Melt the butter + add to the orange juice, coconut milk and coconut nectar. Stir them together.

  5. Sift in the flour, cocoa powder, sugar and bicarbonate of soda together in a bowl to the rest of the mixture.

  6. Whisk together until the batter is smooth.

  7. Pour the cake mix into your loaf tin and bake for 50 minutes, or until a cocktail stick comes out clean when poked into the centre of the cake

  8. Allow the cake to cool for a few mins before turning out onto a wire rack + leaving to cool.
