These ferrero rocher bliss balls are so easy to make and taste like those classic ferrero rochers that we all know and love! They're made with just 5 simple ingredients including dates, coconut and cocoa powder, and are stuffed with a surprise hazelnut centre for a delicious treat that everyone will enjoy!

3/4 cup roasted hazelnuts
1 cup pitted medjool dates
1/4 cup hazelnut butter
3 Tbsp cocoa powder
1/4 cup shredded coconut
2 Tbsp whole hazelnuts
Chocolate drizzle (optional):
1/3 cup chocolate chips (melted)
Add hazelnuts to a food processor and pulse into tiny pieces. Remove 2 Tbsp and set aside for coating.
Add all ingredients to the food processor and pulse until dates have broken down and a sticky dough texture forms.
Use a tablespoon or cookie scoop to scoop out dough. Press one whole hazelnut in the centre and roll into balls. Then, gently roll balls in your crushed hazelnut coating.
Place in freezer for 20 minutes to set, and then drizzle chocolate on top if desired! Store in an airtight container in the fridge or freezer.
