RECIPE BY MOON LAI FROM FOODPASSIONICAL

Try this Malaysian favourite street food known as cekodok, also know as jemput-jemput or kuih kodok. This is a common snack/dessert that everyone loves to enjoy during tea time. This recipe is perfect to use up those overripe bananas!

INGREDIENTS [SERVES 4-5]
  • 300g mashed banana

  • 100g-120g or more flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 cup brown sugar

  • 1/2 tsp salt

METHOD
  1. In a small bowl mix together flour, baking powder and baking soda. Mix well and set aside.
  2. In an another bowl mash the banana. Add in the brown sugar and salt. Mix till well combine.
  3. Rest the dough for about 30 minutes. Meanwhile heat the wok with enough oil to deep fry.
  4. Use your finger to take about 2 tbsp of the batter. Try to make it as round as possible.
  5. Fry the banana fritters until golden brown. Remove from the heat and place the fritters on kitchen towel to remove any excess oil from the fritters.
  6. Serve banana fritters warm with tea or coffee.
