If you’ve been looking for some new plant-based recipes to try this summer, I’ve got you covered! I’ve rounded up a collection of 3 of my favorite healthy vegan recipes. They’re all completely plant-based, made with healthier ingredients, and contain one STAR ingredient….chickpeas!

With everything from chocolate chickpea cookies, to creamy “tuna” salad, there’s something for everyone to enjoy! Thank you for being here and following along on this journey with me. I can't wait to see what you guys whip up!



This chickpea tuna salad is ultra creamy, packed with nourishing ingredients and is completely plant-based! Perfect for an easy snack or lunch meal prep that’s sure to be a new crowd favourite!

serves 3

  • 1 14oz can chickpeas (rinsed & drained)
  • 3 tbsp coconut yogurt (sub greek)
  • 2 tbsp mashed avocado
  • 1/4 c chopped celery
  • 1/4 c chopped onion
  • 2 tbsp chopped green onions
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt & pepper (to taste)
  • 2 slices sprouted bread
  1. Add chickpeas to a large bowl and mash with a fork or potato masher.
  2. Stir in all other ingredients until well combined.
  3. Layer mixed greens, chickpea salad and any of your favourite sandwich fillings between two slices of toasted bread. Top with chili flakes, salt & pepper. Slice in half and devour!



These chickpea cookie bites are soft, fluffy and are the perfect healthier alternative to your classic chocolate chip cookies. No one will believe they’re completely vegan, gluten free and made from chickpeas!

makes 15

  • 1can chickpeas (rinsed & patted dry)
  • 1/4 c almond butter
  • 1/4 c applesauce
  • 1/4 c maple syrup
  • 1/4 c quick oats
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp vanilla
  • 1/2 c vegan chocolate chunks
  1. Blend all ingredients except oats and chocolate chunks in a high speed food processor until smooth.
  2. Add in oats and pulse a few times to combine
  3. Stir in chocolate chunks by hand
  4. Use a cookie scoop to transfer dough to a parchment lined baking sheet
  5. Flatten slightly and top with extra chocolate chips
  6. Bake 12-15 mins at 350F. Let cool on pan at least 15mins to firm up and enjoy!



This chickpea Greek salad is a delicious twist on your classic Greek salad recipe! It’s loaded with fresh plant based ingredients like chickpeas, cucumbers and onions and tossed in homemade Greek vinaigrette. Perfect for summer meal prep that the whole family will enjoy!

serves 5

    • 1 c chopped cucumber
    • 1/2 c chopped onions
    • 1 14oz can chickpeas
    • 1/4 c pitted olives
    • 1/3 c cubed vegan feta
    • 2 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 tsp red wine vinegar
    • 1/2 tsp dried oregano
    • 2 drops oregano oil (for flavour)
    • Salt & pepper to taste
  1. For dressing: add all ingredients to a small jar and shake to combine.
  2. For salad: combine all your ingredients together in a large bowl.
  3. Pour the dressing all over your salad mixture and toss till evenly combined. Top with sprinkled oregano, salt and pepper and enjoy!
