Well what better way to help mom celebrate her special day than through a heart-warming recipe baked just for her? I’ve created a collection of 3 delicious plant-based desserts that mom will love! From moist and fluffy carrot cake bars to delicious birthday cake donuts, there’s something for every mom to enjoy! Thank you for being here and following along on this journey with me. 1. Vegan Carrot Cake Bars

 

These vegan carrot cake bars are soft-baked, moist and loaded with the coziest carrot cake spices! They're topped off with a luxurious cashew cream cheese frosting that hits the spot every time. Vegan, gluten-free  no refined sugars, and the perfect treat for any occasion!Easter dessert, cozy snacking, or just when you are in the mood for something sweet.

 

The best part is that they're so simple to make and will make your house smell like an absolute dream every time. We top these carrot cake bars with a smooth and creamy cashew "cream cheese" frosting which is to die for! It's so irresistibly delicious, no one would believe it's a healthier version! This recipe is both vegan and gluten free, naturally sweetened and contains no refined sugars.

 

 

2. Vegan Birthday Cake Donuts 

 

These vegan birthday cake donuts are fluffy, soft baked, and taste like they’re from a bakery! No one would ever guess that they’re vegan, gluten free and made with healthier ingredients!

 


 

 

3. Raw Vegan Nanaimo Bars 

 
These vegan nanaimo bars are a homemade, healthier take on the Canadian classic dessert that we all know and love! They start with a sweet coconut hazelnut crust layered with a creamy cashew filling, and are finally topped with smooth and silky rich chocolate. No bake, naturally vegan and gluten free, and made from just a handful of simple ingredients!
 
Nanaimo bars have been one of my all time favourite desserts since my childhood and are a classic Canadian treat that’s been around for generations! This healthy homemade version tastes just like the original but is made with just a handful of wholesome ingredients and doesn’t require any baking.
 
The base is made from a coconut, date, walnut crust that is topped with a silky smooth cashew cream filling and finished with a layer of decadent rich chocolatey goodness! I love storing these nanaimo bars in the freezer to have on hand for whenever that sweet tooth craving hits! For a perfect creamy texture, remove from freezer 10-15 minutes before devouring.
