It’s never too late to make a Summer ceviche, right? The bright flavors and colors of the lime, coconut and peppers are irresistible. To make this ceviche extra special, serve them over some crunchy tostadas with some sliced avocado (it just makes everything better) and a sprinkle of chili powder. Who’s with us?
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1/2 purple onion, chopped
1 cup of cilantro, chopped
1 cup of red radishes, chopped
flesh of 2 young coconuts, chopped
juice of 2 limes
salt & pepper, to taste
chili powder, a dash (optional)
Add all ingredients in a mixing bowl and mix well, making sure that all the seasonings have coated the ingredients.
Let the flavour develop in the fridge for at least an hour.
Serve cold and enjoy!
