Our jumbo bowls really are great for heavy meals like buddha bowls! This Coconut Cilanro Lime Rice by @bitesbylex is an amazing base for your buddha bowls! Top if off with lots of veggies and tofu or use it as a wonderful and fragrant bed for your flavorful curries! 

INGREDIENTS
  • Jasmine Rice, 2 cups
  • Coconut Milk, 1 can
  • Water, 1 cup
  • Cilantro, a bunch
  • Lime, 1
METHOD
  1. Add 2 cups of white jasmine rice to a medium sized pot, 1 cup of water and 1 can of coconut milk. Make sure the coconut milk is clean with no gums and added sugars. Use the thick part of the milk & all the liquid, stir it all up and add to stove on high heat.
  2. Let this come to a boil, then add the lid to the pot, lower the heat to a simmer.
  3. Let this sit for 10-15 minutes till all the liquid has absorbed.
  4. Get a fork and test it to make sure it’s cooked and it’s nice and fluffy.
  5. Chop up cilantro and add it into the finished rice and a good squeeze of the lime.
