RECIPE BY NATURALLY HERBAL MAMA

Crisp on the outside and soft and silky on the inside. This baked hasselback potatoes are a great side to your favourite plant-based mains! Make it a little bit spicy by adding some dried chili flakes in the seasoning. 

INGREDIENTS
    • 8 large golden potatoes
    • fresh parsley and chives for garnish
    • 2 tbsp olive oil
  • SEASONING
    • one handful of fresh, chopped parsley
    • 1 tsp salt
    • 1 tsp garlic powder
    • 1 tsp smoked paprika
    • 1 tsp dried oregano
METHOD
  1. Place all your seasoning ingredients into a small bowl and set aside.
  2. Wash and dry your potatoes. Do not peel. Make thin slices almost all the way to the bottom but stopping just before cutting all the way through. It’s a good idea to have a potato for practice.
  3. Preheat the oven to 400 degrees (F).
  4. Place each potato onto a baking sheet lined with parchment paper. Gently pull on each side of your potatoes to slightly open slices that you made. Drizzle oil over all potatoes, you can even massage the oil into each potato to ensure it is well covered. Sprinkle seasoning over each potato. Bake for 40 minutes. Garnish with fresh parsley and enjoy!
