300g tofu, sliced
1 tbsp soy sauce
1 cup spinach
1/2 cup mung beans sprouts
1/4 cabbage, sliced
1 small broccoli, chopped
1 spring onion, chopped
1 tbsp peanut butter
1 tsp soy sauce
juice from 1 lemon
1/4 cup water
In a hot pan, cook your tofu with the soy sauce, around 3 minutes on each side.
Add the remaining ingredients to a bowl or plate and top with your cooked tofu.
For the dressing, place all the ingredients in a small bowl and mix well.]
Drizzle on top of your salad and enjoy!
