RECIPE BY KELSI FROM HEALTHY KELSII

Easy and scrumptious weeknight dinner that's perfect for busy people. In under 10 minutes, you'll have a flavour-packed meal that your family will surely love. Feel free to make a few batches at once if you're planning to meal prep!

INGREDIENTS
  • TOFU SALAD
    • 300g tofu, sliced
    • 1 tbsp soy sauce
    • 1 cup spinach
    • 1/2 cup mung beans sprouts
    • 1/4 cabbage, sliced
    • 1 small broccoli, chopped
    • 1 spring onion, chopped
  • PEANUT DRESSING
    • 1 tbsp peanut butter
    • 1 tsp soy sauce
    • juice from 1 lemon
    • 1/4 cup water
METHOD
  1. In a hot pan, cook your tofu with the soy sauce, around 3 minutes on each side.
  2. Add the remaining ingredients to a bowl or plate and top with your cooked tofu.
  3. For the dressing, place all the ingredients in a small bowl and mix well.]
  4. Drizzle on top of your salad and enjoy!
