This recipe is from Jackie's exclusive Story Takeover for Vegan Bowls! She showed our community how to make the perfect vegan bowls, how you can flavour them and what varieties of veg you can include! This dish is her final creation, a tangy and creamy tahini sauce drizzled over a perfectly-balanced bowl.
1 bunch lacinato kale, finely chopped (or use regular kale)
1/2 lime, juiced
1 tsp olive oil
1 cup quinoa, cooked and cooled
12 oz high protein super-firm tofu, cubed
2 oranges, peeled and sliced
5-6 radishes, thinly sliced
1 avocado, thinly sliced
1/4 cup roasted cashews, chopped
1 tbsp black sesame seeds
1/2 cup finely chopped cilantro
1/4 cup tahini
1/2 lime, juiced
1 tbsp rice vinegar
1 tbsp chili garlic sauce
1 tbsp maple syrup
1 tbsp orange juice
1 tsp garlic powder
salt and pepper, to taste
Add your kale to a bowl and drizzle with lime juice and olive oil. Use your hands to massage for 15 seconds until tenderized.
Divide between 4 serving bowls. Top each with the quinoa, tofu, oranges, radishes and avocado.
Add the ingredients for the sauce to a jar and use a fork to whisk to combine.
Season to taste and adjust to your liking by adding more lime, chili sauce, or maple syrup. Drizzle sauce over the bowls right before serving and sprinkle with cashews, sesame seeds and cilantro.
