RECIPE BY KATIE FROM THE ALL NATURAL VEGAN

This hearty dish combines the earthy taste of mushrooms and juicy tomatoes with perfectly cooked buckwheat pasta by Big Green Organic Food to create a satisfying and delicious meal. Not only is it gluten-free, making it suitable for those with gluten sensitivities or dietary restrictions, but it is also packed with fiber and nutrients, making it a healthier and a more wholesome option.

INGREDIENTS
METHOD
  1. Begin by cooking the buckwheat rotini according to the package instructions.
  2. Next dice the onions, mince the garlic and basil and slice the mushrooms. Add to a saute pan with the olive oil and cook until soft and golden.
  3. Add the remaining ingredients and bring to a soft boil. Add the buckwheat rotini and mix until everything is evenly coated. Serve and enjoy!
