RECIPE BY JANA FROM @THEFOODSPIRATION

Burrito bowls where sweet potato is the star. Gather all these ingredients in your favourite bowl and drizzle your favourite sauce on top. We like adding a few dashes of sriracha!

INGREDIENTS [SERVES 2]
  • 1 large sweet potato
  • small corn can (approx. 150 g)
  • 2 tbsp. olive oil
  • 1/2 tsp salt
  • 1/2 tsp sweet paprika
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried garlic
  • 1/2 tsp coriander
  • 1/2 tsp ground cumin
  • pinch of chilli
  • 200 g rice (any kind)
  • 200 g cooked red beans (approx. 100 g dried)
  • 1 onion
  • 6-7 cherry tomatoes
  • ½ avocado
  • oil
  • salt and fresh ground pepper
  • slice of lemon
METHOD
  1. Preheat the oven to 200°C. Mix olive oil and all seasoning in a bowl, chop the sweet potato and wrap in the marinade. Spread on a baking sheet and put in the oven for 5 minutes. Wrap the corn in a remaining marinade and add it to a baking sheet for another 10-15 minutes until the sweet potato softens.
  2. Meanwhile, rinse the rice and fry chopped onion in oil in a pot first, then add the rice and let it glaze. Then add 500 ml of water, salt, pepper and let it simmer. In 10 minutes, the water should be evaporated and the rice soft. Count extra time if you use brown rice.
  3. Now it is all about serving all ingredients into 2 bowls. Add beans, avocado, tomatoes, drizzle with lemon and enjoy!
