It may be hot or cold wherever you are right now, but no matter the weather, a big bowl of comforting soup like this will surely cheer you up. The sweet potatoes makes it filling and creamy,  while the caramelised red peppers make this soup sweet and smokey.

INGREDIENTS
  • 2 sweet potatoes (600-800 g)
  • 2 fresh red peppers
  • 1 onion
  • 3-4 cloves garlic
  • 1,2 litres boiling water
  • 1 tsp. sweet paprika
  • 1 tsp. curry
  • 1 tsp. garam masala or coriander
  • 1 tbsp. apple cider vinegar
  • salt & pepper
  • oil
  • optional: little bit of cream (can be vegan) or coconut milk, fresh herbs or seeds for topping
METHOD
  1. At first, chop onion and cube sweet potatoes with peppers.
  2. Start frying the onion in oil in a big pot and then add sweet potatoes and peppers after a while. While stirring, let it all caramelize. Add seasoning (curry, paprika and garam masala) and fry it quickly as well.
  3. Pour boiling water and let the soup bubbling until the sweet potatotes are soft. 10-15 minutes should be enough, depending on the size of cubes you’ve cut.
  4. Add whole cloves of garlic, salt, pepper and apple vinegar and mix all of the ingredients with immersion blender. Add more seasoning if needed.
  5. Enjoy with your favourite herbs, seeds and cream, coconut milk or as is.
