This vegan avocado pasta is ultra creamy, rich and takes just 15 minutes to whip up! It’s the perfect weeknight dinner that everyone will enjoy!
1 ripe avocado
3 tbsp lemon juice
1/4 c fresh basil
2 tbsp olive oil
2 tbsp nutritional yeast
2 tsp minced garlic
salt/pepper to taste
6 oz pasta
vegan parmesan, as needed
Cook pasta al dente according to package instructions.
Peel avocado and add to a high speed food processor along with all other ingredients. Blend together until smooth and creamy.
Pour over cooked pasta and heat in a pan over medium until warmed. Top with vegan parmesan if desired and enjoy!
