For this batch, the doughnuts themselves are a simple vanilla flavour whilst the glaze is a sweet berry delight, packed with antioxidants too!

What’s more, these donuts are baked, not fried! So not only do they taste scrumptious and cakey, they’re also WAY healthier – double winner!

INGREDIENTS:

For Donuts:

  •  

  • 1.5 cups self-raising flour

  • 1/2 cup brown/ coconut sugar
  • 3/4 cup coconut milk
  • 1tsp vanilla extract 
  • 4 tbs coconut oil
  • 2 tbs coconut yogurt
  • 1tsp baking powder

    For Black Goji Glaze:

    •  

    • 1/2 cup icing sugar, sifted 

    • ½ cup baobab powder (for extra tanginess!)
    • 2.5 tbs coconut milk
    • 1tbs coconut yogurt 
    • 3 tsp black goji berry powder
    • 2 tsp acai powder
    • 1/2 tsp blue spirulina
      METHOD:

      To make donuts:

      1. Preheat oven to 180°C 
      2. Sift flour into a mixing bowl, add the sugar +baking powder
      3. Mix together.
      4. Add coconut milk, coconut yogurt, vanilla and melted coconut oil + whisk 
      5. Place the doughnut batter into the donut tray evenly, using a spoon
      6. Bake for 15 minutes until lightly browned on top
      7. Remove from oven, let cool for a few mins before transferring to a cooling rack.
      8. Allow to cool completely before adding the glaze

         

        To make glaze:

        1. Combine all the ingredients + whisk until smooth
        2. When the donuts are cook, dip them in the glaze
