These chickpea peanut butter banana blondies are soft, FUDGY, and taste like a gooey peanut butter cookie! They’re completely vegan, gluten free and are made from only 8 simple ingredients. Perfect for a healthy afternoon snack, sweet treat, grab and go breakfast, you name it!

● 1/3 cup quick oats ● 1 15 oz can chickpeas (rinsed and drained) ● 1 ripe banana (mashed) ● 1/2 cup peanut butter ● 1/4 cup maple syrup ● 1/2 tsp baking powder
● 1/4 tsp baking soda
● 1/3 cup chocolate chips
Preheat oven to 350F and grease an 8x8 baking pan.
In a high speed food processor, blend oats until a flour like consistency is formed.
Add all other ingredients except the chocolate chips, and blend until batter is completely smooth.
Fold in the chocolate chips.
Transfer batter to your prepared pan and bake for 20-23 minutes until sides are lightly golden brown. Let cool completely in pan and then slice into bars and enjoy! Store in an airtight container in the fridge for up to a week
*You can substitute any smooth nut butter for peanut butter, or use Sunbutter for a nut free option
*Use an 8x8 pan, a 9x9 pan results in thinner blondie bars
