Welcome to the cake of all dreams! An intense chocolate orange flavour, my vegan Bundt cake is drizzled with a blood orange glaze for the most striking cake, with no compromise on indulgence! The texture is tender and moist all at once for your ultimate chocolate orange dreams!
INGREDIENTS DRY:
- 150 grams plain flour
- 120 grams self-raising flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- zest of 2 blood oranges (or regular oranges)
INGREDIENTS WET:
- 175 grams coconut sugar (or brown sugar)
- 160 grams dairy free butter
- 160 milliliters dairy free yogurt ( I use coconut yogurt)
- 55 grams cocoa powder
- 60 milliliters hot water
- 180 milliliters coconut milk (or any plant-based milk)
METHOD FOR VEGAN CHOCOLATE ORANGE BUNDT CAKE:
-
Preheat oven to 180c. Grease your bundt tin. Set aside
- In a large bowl, whisk the dry ingredients together until combined.
- In another (smaller) bowl, whisk the cocoa and hot water together.
- With an electric whisk, cream together butter, sugar and yogurt.
- Add in half of the flour mixture and cocoa mixture, whisk gently.
- Add in coconut milk and the remaining flour mixture, whisk until there are no lumps.
- Pour the batter into your prepared Bundt tin.
- Bake for 50 -60 mins, or until a toothpick inserted into the center comes out clean (no wet mixture sticking to it).
- Remove bundt tin from the oven and let cool in pan for 10 minutes.
-
Invert bundt cake onto a wire rack with parchment paper and allow to cool completely before adding the glaze.
METHOD FOR VEGAN CHOCOLATE ORANGE BUNDT CAKE:
- Add the blood orange juice to the icing sugar and mix together
- If you want the glaze more runny, add a little more blood orange. If you'd like it thicker, add more powdered icing sugar.
