Parfait made with tropical-flavoured chia pudding. There's no denying that each spoonful will remind your of your favourite beaches and tropical destinations! Each layer has its own distinct flavour, but pairing them together, makes for an incredible experience for your taste buds. So dig deep and make sure to get two flavours in each bite!

INGREDIENTS

  • COCONUT CHIA PUDDING
    • 2 tbsp chia seeds
    • 1/2 cup coconut milk, plus more if needed
    • a pinch of himalayan salt
    • 1 tsp vanilla extract
  • MANGO TURMERIC CHIA PUDDING
    • 2 tbsp chia seeds
    • 1/2 cup fresh mango purée
    • 2 tsp ground turmeric
    • 1 tsp vanilla extract
    • a pinch of himalayan salt
    • unsweetened almond milk,  as needed (optional)
  • TOPPINGS
    • coconut yogurt
    • roasted cashews
    • desiccated coconut

METHOD

  1. In a small bowl, add in all your coconut chia pudding ingredients and stir. Set aside for 5 minutes and stir again to keep the chia seeds loose. Place in the fridge for an hour to chill and to let the chia seeds expand and absorb all the liquid.
  2. Repeat the same steps for the mango turmeric chia pudding.
  3. Take your chia pudding out from the fridge and stir. If the pudding is too thick to your liking, simply add more plant milk (coconut milk or almond milk) until the desired consistency has achieved. I like my chia pudding to be a little more runny!
  4. Get your dessert glass and assemble your chia pudding by placing 2-3 tbsp of chia pudding at a time - alternating flavours. 
  5. Top with a generous dollop of coconut yogurt, roasted cashews and desiccated coconut. I totally recommend not skipping the toppings as they are an essential element in this delicious recipe. Enjoy!
