This is a delicious roasted mushroom recipe that's perfect to pair with pasta and more roasted veg! The garlic is infused wonderfully into this chewy mushroom - which gives a satisfying bite and chew!

INGREDIENTS
  • 2 lbs of mushrooms
  • 1 tbsp avocado oil, or any kind of oil that you prefer
  • 2-3 tbsp balsamic vinegar
  • 2 tbsp coconut aminos
  • 3-4 garlic cloves
  • sea salt, to taste
  • freshly cracked black pepper, to taste
  • 1 tbsp fresh parsley, chopped
  • sesame seeds, to garnish
METHOD
  1. Mix all the ingredients, except sesame seeds and roast (make sure the mushrooms are well spread out on the baking sheet) at 400°F for 20-25 minutes.
  2. Stir at halfway point. Garnish with sesame seeds and some parsley and
