RECIPE BY MODERN FOOD STORIES

This delicious dip combines two delicious Mexican favourites: Guacamole and Street Corn! Ready your chips and dip in to these gorgeous layers.

INGREDIENTS [serves 4]
  • GUACAMOLE
    • 2 large ripe avocados
    • 1/4 cup fresh coriander, chopped
    • juice of 1/2 lime
    • 1 green onion, finely chopped
    • 1/4 - 1/2 jalapeno, chopped
    • salt + pepper to taste
  • MEXICAN STREET CORN TOPPER
    • 1 1/4 cups frozen sweetcorn
    • 1/2 cup cooked puy lentils
    • 1 tbsp olive oil
    • salt to taste
    • 2 jarred roasted red peppers or 1 raw bell pepper, chopped
    • 1/3 tsp paprika (i like smoked)
    • 1/3 tsp ground cumin
    • 1/3 cup crumbled vegan feta
    • option to top with more chopped jalapeños, spring onions, coriander
  • DRESSING
    • 3 tbsp vegan mayo
    • 3 tbsp plain vegan yogurt
    • 1 good pinch of garlic powder
    • juice of 1/2 lime
    • salt + pepper to taste
METHOD
  1. Preheat the oven to 392F / 200C / 180 fan.
  2. Place the sweetcorn and puy lentils on a baking tray lined with greaseproof paper. Toss with 1 tbsp olive oil and salt. Roast for 25 minutes, stirring once. If using fresh red pepper, add to the tray with the sweetcorn + puy lentils.
  3. Add all the guacamole ingredients to a mixing bowl and blitz with a stick blender until smooth. Option to use a small high speed blender if you prefer. Adjust seasoning to taste.
  4. Make the dressing my mixing all the ingredients in a small bowl.
  5. Add spices to roasted corn, lentil and red pepper and toss with dressing.
  6. Spoon guacamole into serving bowl and top with Mexican Street Corn. Finish with vegan feta and more jalapeño, chopped green onion and coriander if desired.
