This simple and easy curry recipe can be made under 30 minutes - great for when you're pressed for time but still want a nourishing, comforting meal to serve on the table. 

  • 1 can full fat coconut milk
  • 1 cauliflower
  • 2 cans chickpeas
  • 1 onion
  • 5 cloves garlic
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 2 tsp turmeric
  • 1 tsp smoked paprika
  • 1 cup vegetable broth
  • 1 tbsp coconut aminos
  • 1 cup dried brown rice
  1. Cook your rice according to package instructions.
  2. Begin by dicing your onion and mincing your garlic. Add to a large pan and sauté in the coconut aminos.
  3. Chop up the cauliflower and add to the pan and sauté. You may need to add a bit of the vegetable broth to it at this point.
  4. Add the remaining ingredients together and cook on medium for 20 minutes.
  5. Serve with cilantro on top and enjoy!
