This simple and easy curry recipe can be made under 30 minutes - great for when you're pressed for time but still want a nourishing, comforting meal to serve on the table.
INGREDIENTS

1 can full fat coconut milk

1 cauliflower
-
2 cans chickpeas
-
1 onion
-
5 cloves garlic
-
2 tbsp curry powder
-
1 tsp cumin
-
2 tsp turmeric
-
1 tsp smoked paprika
-
1 cup vegetable broth
-
1 tbsp coconut aminos
-
1 cup dried brown rice
METHOD
- Cook your rice according to package instructions.
- Begin by dicing your onion and mincing your garlic. Add to a large pan and sauté in the coconut aminos.
- Chop up the cauliflower and add to the pan and sauté. You may need to add a bit of the vegetable broth to it at this point.
- Add the remaining ingredients together and cook on medium for 20 minutes.
- Serve with cilantro on top and enjoy!
