RECIPE BY MOON LAI FROM FOODPASSIONICAL

Fried rice that's easy, and packed full of flavour. Delicious on its own but you can also use this as a base for your nourish bowls or buddha bowls.

INGREDIENTS
  • 2 cups day old rice
  • 1/4 cup french beans, chopped
  • 1/2 cup mix vegetable
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 fresh chilli
  • 150g fried tofu
  • 1/2 tsp dark soy sauce
  • 1 tbsp soy sauce
  • 1 tsp chilli flakes
  • a dash of white pepper
  • 2-3 tbsp coconut milk
  • 1-2 tbsp oil for cooking
METHOD
  1. Heal oil, sauté garlic and onion till fragrant. Add in French bean and fresh chilli, fry until tender.
  2. Add in mix vegetable, fried tofu and rice. Add in all the seasoning.
  3. Stir fry the rice and vegetable until heated through and combine. Add chopped coriander if desired.
